The 13e is where Paris keeps its Vietnamese density — Pho Tai's Bib Gourmand, Pho Bom's broth, the Choisy strip. None of it sits in the central arrondissements the chapter covers. Bànôi (the name means grandmother) opened on rue Amelot in 2017 as the modern-Vietnamese answer in the 11e, between Bastille and the Carreau du Temple Marais edge. The signature is fresh spring rolls — seven or eight versions on the menu, vegetarian to salmon — dipped in house sauces; the broader card runs the South-East Asian register with care. Featured by Vogue France. Open and airy at lunch, moody at dinner. The Vietnamese pick that doesn't ask the audience to cross the river.
