Septime (Bertrand Grébaut's 50 Best regular on rue de Charonne) and its sister Clamato (no-reservations seafood) reset the gravitational centre east in 2011; Le Servan moved nearby; the Faubourg-Saint-Antoine craft corridor and Le 6 Paul Bert hold the wider register. Rue Oberkampf carries the cocktail and natural-wine axis up north. From Place de la Bastille east through Faubourg-Saint-Antoine to Charonne and up to Oberkampf, the chapter takes the chef-led 30-seat room where the menu changes weekly and the wine list ferments naturally.
