The dough rests 72 hours, the oven runs at 485°C, and a pizza is in and out in 60 seconds, which is where the name comes from. San Marzano tomatoes, Fior di Latte, Caputo flour all flown in weekly from Naples. The Sendlinger-Straße room in the Hofstatt shopping passage is the original Munich location and the one to book; the Winterwelt pop-up runs November through March if you want the snow-globe version.
