Bar Gabányi
Isarvorstadt
Stefan Gabányi's serious cocktail address — Munich's grown-up bar
Charles Schumann's cocktail address — the Munich bar reference, on Odeonsplatz.
Charles Schumann moved his bar from Maximilianstraße to Odeonsplatz 6 in 2003, and two decades on, this remains the room every serious bartender in continental Europe has read about before they have visited. The drinks list is short and unfussy — properly cold martinis, the classics built without theatre, a list of Schumann's own creations from the books that taught a generation. The kitchen runs from breakfast through to a midnight steak tartare; the room itself is dark wood, low light, no music. Sundays the bar opens late; Saturdays it is closed by design — Schumann does not believe in Saturday-night cocktails.
Sit at the bar if a stool is open — the senior staff read the room and build to it. The original Maximilianstraße address closed years ago; this Odeonsplatz room is the live one. Saturdays closed: not a typo, a position. For daytime espresso and a sandwich, the Tagesbar in Fünf Höfe is the same hand on the glass.
