Hidden in the back room of Salumeria Giusti, an alimentari trading since 1605 and reckoned among Europe's oldest, this is a four-table institution that takes booking weeks ahead. Lunch only, it serves the Modenese canon, tortellini and tagliatelle, braised cheek, cotechino, alongside the house cured meats and Giusti balsamico. The dining room occupies the salumeria's former slaughterhouse and feels like a private secret.
