Ahmet Can Aras — Gault & Millau Türkiye's 2024 Rising Chef — opened Amavi as a chef-led seafood and cocktail address with a fish-aging cabinet visible from the open kitchen and a wood-fired hearth at the centre of the dining room. The cooking pulls cleanly from Aegean and Mediterranean traditions without leaning on either, the cocktail programme is one of the most serious in the village, and the room has the controlled energy of a city restaurant transplanted into a stone courtyard. Sit at the kitchen counter rather than the courtyard if you can — the dry-aged fish course off the wood-fire is the one to watch being plated. Strong cocktail list; the martini is properly cold.
