Joey Ghazal's New England Brasserie group brought THE MAINE from Dubai to a hilltop pavilion above Maxx Royal, and the format runs as it does in the Gulf — sea bass ceviche, tomato carpaccio, lobster taglioni, prime cuts from a serious grill. The room is candle-lit, dark-stained and theatrical, with sunset DJ sets that segue into late-evening dinner service. It's the resort's most extroverted room, calibrated for an Istanbul-Dubai crowd who travel between the two cities monthly.
Arrive at 19:30 for the sunset DJ set on the lower terrace, then move upstairs for dinner — one reservation, two acts. The lobster taglioni travels with the brand for a reason.
