Hakan Süve has run the Marmara's kitchen since the early 2010s, and Tuti — the evening fine-dining concept that activates after seven — earned a Michelin Guide listing and four pearls from the İncili Gastronomy Guide on the strength of restraint. Crudo, grilled fish from the day's catch, vegetable plates that take Aegean produce seriously. The terrace looks across the marina to the castle.
Arrive before sunset; the castle below shifts colour for half an hour and Tuti's terrace edge is the best seat in town for it. Süve's tasting menu is the way in.
