1890 Lyon-bouchon-style bistro — under the Dumant family from 2025, after Ducasse
Aux Lyonnais is the Bourse neighbourhood's classic 1890 bistro: period mouldings, red banquettes, antique mirrors, earthenware tiles, tables tight enough to overhear the next conversation. Alain Ducasse stewarded it for over twenty years; in early 2025 he ceded majority to the Dumant family — twins Margot and Félix run operations now, with chef Victoria Boller cooking faithful Rhône classics with subtle modernisation: quenelles de brochet, saucisson lyonnais, île flottante. It is the right answer when you want a real bistro lunch in the 2e without inventing the wheel.
Ownership shift in 2025 — kitchen still strong, dining room slightly more relaxed. Quenelles and the île flottante are the markers.
