Beynel reads the Turkish kitchen as a map — each dish anchored to a coğrafi işaret region, from Antep's pistachio to Erzurum's cağ kebab to Aegean herbs out the back door. The setting is open-air under mandarin and lemon trees on Bitez's Adliye Caddesi, the cooking is unfussy and confident, and the Bib Gourmand recognition was earned twice over. A serious case for staying inland on a Bodrum night.
