The Sonnet series — each label keyed to a Shakespeare verse — leans on Cabernet Sauvignon, Merlot, Chardonnay and Syrah, but the estate's archaeological reach is what holds attention: it cultivates Foça Karası, a black grape grown on this peninsula for two and a half millennia, alongside Bornova Misketi. The restaurant overlooks the vines; the cellar is gothic-arched and properly cool. Production sits at a controlled 45,000 bottles a year.
