Stefano Ciotti, chef-owner of Pesaro's Michelin-starred Nostrano, returns to The Bodrum EDITION for 2026 with a deliberately quieter concept than his earlier Brava: a trattoria that argues for restraint. Hand-rolled pasta with one or two ingredients done properly; vegetables from the kitchen garden; fish handled with the precision of a Michelin kitchen but the framing of a family Sunday lunch. The upper deck looks across to Yalıkavak Bay. It opens 1 June.
The pasta course is where Ciotti's technique reads loudest, three or four shapes, all rolled that morning. Order two pastas and skip the secondi if you've already booked Kitchen for another night.
