Mehmet, Ahmet and Ramazan İhtiyar opened the original Bitez Dondurma on the village square in 1995 and built the Bodrum mandalinası flavour the rest of the country eventually copied. Fresh fruit, no additives, and a list that reads as a calendar of the peninsula: tahini-susam, balbadem, çilek, böğürtlen, dut. The Bitez shop is still the one to make the trip for.
Order the Bodrum mandalinası and the tahini-susam in the same cup. Ignore the Istanbul branches; the Bitez square shop is where the recipe still lives.
