Köşebaşı opened its Bitez branch in 2022 as the second Bodrum address after Türkbükü, and the room is one of the few full-service Adana-Tarsus kebap operations on the peninsula that stays open year-round rather than only in season. The kitchen runs the brand's chain register since 1995 — söğürme, gavurdağı, vegetable pide, satır kebabı, the longer side cuts — alongside a vegan and gluten-free menu that the kebap segment otherwise rarely carries. The Bitez room is built around a sheltered garden that takes the late-summer heat out of the meal, with a cocktail card that fills the awkward hour before service. The chapter files it as the right answer for the Bitez page when the inland Beynel or Bağarası booking has already been used.
Garden tables in summer, indoor room in shoulder season. Order the satır kebabı and at least one of the cold meze rounds — the brand's vegan menu is unusually capable for a kebap house. The Bitez branch runs through winter when most of the bay closes; reservations rare except August weekends.
