Run as a joint project of Bodrum Belediyesi and the Bodrum Tohum Derneği, the üretici pazarı is the peninsula's slow-food anchor — a Saturday-morning circle of around forty growers in the Ortakent meydan selling what they grew that week: heirloom domates, sevketibostan, deniz börülcesi, raw çam balı, ev tarhanası, hand-rolled erişte, the autumn pekmez. The seed-association mission is to keep the Aegean's endangered cultivars in rotation; the market is the public face. The locals' Saturday, not the tourist circuit.
Arrive by 09:00 — the peninsula's serious cooks (and a few of the marina chefs) clear the heirloom domates and the deniz börülcesi inside the first hour. Bring cash and a basket; ask the growers what they'd cook with what's on the table.
