Gümüşlük Wines is the village's working boutique winery, producing additive-free, hand-harvested wine from four Bodrum-peninsula vineyards: Gümüşlük Oyata, Mumcular Silva, Mor Salkım, and Çal Lermonos. The varietals run Şiraz, Chardonnay and the indigenous Öküzgözü — the indigenous-grape line is the more interesting of the three, and the total annual production caps at 5,000 bottles by design rather than scale. The winery's grammar is the antique-Myndos terroir (Pliny noted Myndian wine as digestif-grade two millennia ago), hand-picked early-morning fruit, and a no-additive vinification. Visits are by appointment; the tasting room runs through the small batches and the seasonal release schedule.
