The format is semi-buffet and à la carte, the produce mostly local and organic, and the cooking aims to read like a refined village kitchen rather than hotel food. Breakfast runs an authentic Aegean spread, dinners centre on garden vegetables, grilled fish and lamb. Saturday evenings the room turns over to Taverna Nights — a curated mezze buffet with a long drinks list and a more social tempo.
