Zeki Soylu has run Gonca for the better part of two decades, on a stretch of Torba sand that the bay's hotel boom largely passed by. The kitchen turns out around forty mezes a day off the back tezgâh, the fish comes from the Torba boats, and the room is the Aegean idea of a table on the sand, wood, lanterns, a long wine list, a clientele that has been coming since the 1990s. One of the few serious Bodrum fish houses that runs year-round.
The sand-edge tables are the move; book by phone for August weekends. Start with the deniz börülcesi and ask Zeki for the day's catch grilled whole.
