Gürkan Tümsek runs Malva as a quiet thesis — most ingredients arrive from within fifty kilometres, the kitchen runs near zero-waste, and the menu shifts every few weeks with what the Aegean farmers and fishermen actually have. Local prawns become agnolotti with bisque; red mullet finds its way into a Marseille bouillabaisse; vegetables are treated with the seriousness usually reserved for the day's catch. Michelin Guide listed since 2024. The room sits above the cove at Susona, all warm timber and lantern light.
