Karafaki Erhan Usta has worked the Gümüşlük waterfront since 1983 — Erhan Usta's name is the brand, his 38-plus seasons of day-boat knowledge are the menu, and the long stone terrace under the nazar-strung tree sits a metre from the water. The kitchen is straight Aegean fish-and-meze grammar: whatever the morning boats brought in, grilled simply, mezes from the garden, raki cold. The crowd is half Istanbul summer-house, half European yacht crew that has figured out you do not have to drive to Türkbükü for a serious sea-bass dinner — and the room has stayed on chef rather than spectacle through four decades of peninsula churn.
Ask for Erhan Usta to walk the catch with you before ordering. Octopus salad, sea bass on the grill, plenty of mezes. The chef's name is on the sign for a reason — when you book, mention you are coming for the fish of the day.
