Opaque by the Sea is the second Bodrum room of Nilay Lale, the founding chef of TUZZ; it took over the Khai Hotel pier in the Yahşi-Ortakent yalı after she pushed the kitchen past the seven-year TUZZ formula. Soft greys and low light, no white-linen ceremony, but the cooking holds a fine-dining register quietly: a Kerala shrimp şiş, a smoked-cherry-wood lamb tartare, a tahini parfait with crisp kadayıf. Lale's background reads through the menu, JW Marriott, Swissotel, Mandarin Oriental and a long Aila pass through her line, so the Asian notes are technique rather than fusion grammar. The room sits a step from the water on Yahşi yalı and reads as the peninsula's most thought-through hotel restaurant outside Türkbükü.
Book the pier-edge two-top and order the smoked lamb tartare plus the Kerala shrimp şiş. The kitchen runs casual-fine; ask Nilay's pass what came in that morning and let the order go from there.
