TUZZ Restaurant is chef Nilay Lale's Bodrum room, on the Khai Hotel pier in the Yahşi-Ortakent yalı, a step from the Aegean. Lale, whose technique was built across JW Marriott, Swissotel, Mandarin Oriental and Aila, folds Anatolian tradition into Asian and Mediterranean precision, method rather than fusion. It is the seaside counterpart to her Karaköy TUZZ, and among the most considered hotel restaurants on the peninsula.
Book the pier-edge two-top and order the smoked lamb tartare plus the Kerala shrimp şiş. The kitchen runs casual-fine; ask Nilay's pass what came in that morning and let the order go from there.
