Cafe Chives opened on Caferpaşa Caddesi in Eskiçeşme as a three-partner venture, with the German baker Roger Lange — known locally as Roger the Baker — running the kitchen. The room is small and reads more Berlin Charlottenburg than central Bodrum: sourdough breads from a starter Lange brought from Hamburg, croissants laminated the morning of, a Munchbox grazing tray that the room is now known for, and proper espresso. There is a separate night-shift sister room (@chivesnightshift) for the after-dinner hour.
Editor's Tip
The Munchbox is the order to take home for a yacht morning or a hotel terrace breakfast. In the room, the dark sourdough toast and the kouign-amann are what Lange wants you to try.
